Quinoa Tabbouleh

Quinoa Tabbouleh

Ingredients:

1 3/4 cups water
1 cup uncooked quinoa, rinsed
1/2 cup chopped fresh parsley
1/4 cup raisins
1/4 cup chopped cucumber
1/4 cup fresh lemon juice
2 tablespoons chopped green onions
1 tablespoon extra-virgin olive oil
2 teaspoons minced fresh onion
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Procedure:

In a medium saucepan, combine water and quinoa. Bring to a boil and then cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Remove from heat and fluff with a fork. Stir in parsley and remaining ingredients. Cover and let stand at least 1 hour for the flavors to absorb.
